These cakes take the blueberry muffin to a new level.  They are moister and richer, while remaining light.  Many different berries could be substituted for the blueberries as well.  Experiment if you like; add cherries, raspberries or even chocolate chips!  The most important thing to remember is to serve it warm with high quality ice cream.  The balance of warm and cold is memorable.

 

Makes up to 16 small cakes or one large cake serving 8-16 people

 

2 cups                         AP flour

2 teaspooons             baking powder

1 teaspoon                 sea salt

6 oz.                            butter, softened

2 cups                         sugar

3 ea.                            eggs

¼ cup                          sour cream

1 teaspoon                 vanilla extract

1 teaspoon                 almond extract

1 tablespoon              lemon zest

2 pints                         fresh blueberries

 

Preheat oven to 350º.  Sift together dry ingredients in a bowl.  Using the bowl of a stand mixer, add butter and sugar then cream with a paddle attachment at high speed until the mixture becomes airy and light colored.  Reduce speed to medium and add eggs, one at a time, until mixed.  Continue mixing and add sour cream, zest, almond extract and vanilla then reduce speed to low and add the dry ingredients.   At the restaurant we use 5” round paper pastry cups, but at home you can use muffin tins, small brioche molds, ramekins or even make one large cake in a baking dish.  Either way, grease the mold with non-stick spray and fill one half to two thirds full with the batter.  Top the cakes with the blueberries and bake until set.  The time will vary according to the pan used. You can test for doneness by inserting a toothpick in the center; when it comes out clean your cakes are done.  Serve warm with a scoop of vanilla ice cream.
