what we do.
It’s important to us that while producing your event, we preserve the beauty of the Hudson Valley and our environment. We take the following steps at all events, whenever possible.
- we always recycle paper, glass & plastic products
- we use herbs grown in our own gardens
- we recommend biodegradable and/or bamboo plates & flatware
- organic waste is composted
- cooking oil is reused for biodiesel fuel

And most importantly, we use local, organic and seasonal ingredients in all of our custom menus.
what you can do.
When planning your wedding or event, our catering director is happy to make green and environmentally-friendly suggestions every step of the way. Here are some ideas to start the conversation.
- Use local vendors!
- Utilize recycled products – such as paper for your invitations, menus, etc.
- Select a seasonal menu, which will enable us to source food from more local growers & producers.
- Use environmentally-friendly decorations – such as local, seasonal flowers, soy candles, etc.
- Rent china & glassware, or choose to use recyclable, renewable, or biodegradable products.
Small steps can make a big difference, without too much effort or expense on your part.
